Caroline Lynch has lived with coeliac disease for over a decade. For years she experienced what so many coeliacs know: arriving at a café, a deli, or a petrol station only to find the grab-and-go section had nothing safe to eat.
So she started making her own. What began as sandwiches for outside catering — encouraged by family and friends — grew into a proper business supplying shops and caterers across the North West of Ireland.
Supported by the NWRC Business Support Centre through the InnovateUs programme, Caroline standardised her recipes and scaled production — all while keeping the quality and care that started it all.
